As the name Amaretti Cookies goes, its no rocket science to know that, these Chewy Almond Cookies come from Italy. If you have been to Italy and haven’t tried these then you definitely missed out.

I kept them low sugar by not rolling the cookies in powdered sugar as the original recipe calls for.

Ricotta Almond Gluten-free Cake

Chewy_Almond_Flour Cookies_Amaretti_ Cookies2INGREDIENTS:

  • 2 cups fine almond flour. About 100 g
  • 3/4 cup (131g) granulated sugar About 150 g
  • 1/4 TSP salt
  • 1/4 TSP baking soda
  • 1 large egg white
  • 1/2 teaspoon almond extract


  • Preheat oven to 325 degree F
  • Mix almond flour, sugar, salt, and baking powder in a mixing bowl
  • Add the egg white and the almond extract
  • Form the dough into a disk, wrap it in plastic, and refrigerate for at least 1 hour.
  • Preheat oven to 325 degree F
  • Lightly grease a baking sheet, or line it with parchment.
  • Make 1″ balls from the dough and place the dough balls onto the prepared baking sheet, spacing them about 1 1/2″ apart. Gently press down on each ball to flatten just slightly.
  • Bake the cookies for 15 to 20 minutes, until they’ve cracked slightly and are golden brown, but are still slightly soft when pressed.
  • Remove the cookies from the oven, and allow them to cool for 5 minutes on the pan, then transfer them to a rack to cool completely.

Leave me in NYC and I would tirelessly walk the length and breadth of the city (after all, There is always something open 24 hours a day). Through this blog, I am hoping to bring in my passion and love for a few things – Cooking, Travel, Kids, Coffee, Clothes and in the interim learn more myself.
